Three heavy hitters in the food industry have released their "What's Hot 2023" report, with research from the National Restaurant Association , Technomic, and the American Culinary Federation (ACF), which gathered at least 500 professional foodies, culinary leaders, and chefs to arrive at a consensus for upcoming trends. A crucial goal was predicting how restaurant menus would change for the year 2023, and their results indicate that menu streamlining, or minimalism is among the groups' Top Three Macrotrends. The other two things they predict you will see more of are comfort foods and more local dining experiences. While they note that inflation  has created a desire for more customer value when dining out, they also observe that the cost of home groceries is outpacing menu prices, so folks will still be able to justify dining at their favorite spots. It was made law earlier this year for places to eat with more than 250 staff to legally show the calorie count of meals on menus – but one restaurant has gone a step further. Mexican chain Wahaca has decided to not only display a meal’s calorific count but also its carbon footprint. Thomasina Miers, the chain’s Co-Founder, said: “When the government started telling us that we had to put calories on our menus, we thought it was a nice opportunity to start talking about carbon.” She explained the decision was made to show customers the steps they can take in their own lives to mitigate climate change – and to stop the environmental issue being so overwhelming. “Calories are not a brilliant way to determine how healthy food is and they’re definitely not a good way to determine whether it’s good for the planet. Last week, lettuce made headlines in Canada following reports it was being pulled from menus temporarily. Restaurants such as SanRemo Bakery in Toronto, for example, posted their sandwiches on social media behind a sign indicating there would be no lettuce on them. Supplies of green leaf, romaine, and iceberg have been short in California’s Salinas Valley due to a combination of warm, dry weather, which created plants susceptible to disease, including the Impatiens Necrotic Spot Virus (INSV) seen in large swaths of the Salinas Valley for over three months.
